Function
- Emulsification: It is primarily used as an emulsifier. It helps to stabilize emulsions by reducing the surface tension between two immiscible liquids, such as oil and water. It forms a protective layer around the oil droplets in an oil – in – water emulsion or around the water droplets in a water – in – oil emulsion, preventing them from coalescing and maintaining the homogeneity of the emulsion.
- Texture improvement: In food and cosmetic products, it can improve the texture and mouthfeel. In food, it can make products like ice cream and baked goods smoother and more consistent in texture. In cosmetics, it helps to give creams and lotions a more pleasant and spreadable texture.
- Antioxidant protection: It can act as a protective agent for certain ingredients that are sensitive to oxidation. By forming a barrier around these ingredients, it helps to prevent their exposure to air and thus reduces the rate of oxidation, extending the shelf – life of the product.
Application
- Food industry: It is widely used in the food industry. In baked goods, it helps to improve the volume and texture, and delays staling. In dairy products like ice cream, it prevents the formation of ice crystals and improves the smoothness. It is also used in margarine and other oil – based products to stabilize the emulsion and improve the appearance and texture.
- Cosmetic and personal care industry: In cosmetics, it is used in creams, lotions, and makeup products. It helps to emulsify the oil and water phases, ensuring a stable and smooth – textured product. It also aids in the uniform distribution of pigments in makeup products. In shampoos and conditioners, it can improve the texture and help in the dispersion of other ingredients.
Pharmaceutical industry: It is used in some pharmaceutical formulations. It can be used as an emulsifier in topical creams and ointments to ensure proper dispersion of the active ingredients. It may also be used in some oral formulations to improve the solubility and stability of certain dru
